I know how to get 007 mode on goldeneye for the N64. You just complete the game on the hardest difficulty including the hidden aztec and egyptian levels. (They're just extra levels that you can only play on the hardest level). Don't worry too much about 007 mode, you only get 4 different options:
enemy accuracy
enemy damage
enemy health
enemy reaction time
(I think that's right anyway :D)
