Lets not try and predict the release date of GT5 as it'll only get delayed 365 times.
However being the owner of a PS3 I was able to try out the GT5 HD demo and even tho the graphics are very detailed the rest of the demo felt like it had the same physics engine as GT4.
Now Gran Turismo 5 Prologue has been released on the JAP Playstation Network and I could download this if I could be bothered to make a JAP PSN account. But what I can share is a video of someone else playing GT5P with a Logitech® G25 Racing Wheel.
One word: AMAZING!

There is also an official site for GT5 as well which contains in-game car screen shots and other video trailers http://www.gran-turismo.com/en/

I just took a look at the demo video on the GT5 website. This game has sold Sony a PS3. Yup when this game hits the shelves I am buying a PS3. I nearly fell off my seat when I saw the Ferrari 360 in the final few seconds of that video. It's taken 5 versions to get them in there but at last they are there now.
Nitrous take another look at the both the G25 driver video and the GT5 prologue video on the website. Only a handful of driving games have implemented the full clutching action on the G25 so it's safe to assume they needed to do something to get that to work. Also take a look at the cars in the video. When they brake the weight transfer is much more apparent than it was in any of the other games, something must have been done to the physics in the game but I guess we'll have to wait until the final version is out to see the whole story.

I managed to make me a JAP account on the playstation 3 network using the GTP guide on how to setup said account and I managed to find someone on the forum that had made a thread for the translation of each in game option screen.
Lost for words for the first 10minutes last night but everything is highly detailed. Needless to say a HD TV comes highly recommended. In car view is as good as all the pictures we have all seen on this forum and the rear view mode from the in-car option allows you to see over the rear seats within the car and though the rear window. Very cool!
The downside of in-car view is very minor but the the driver you see in the car does not move his hands when selecting another gear. This can be done and I'm sure it will be done for the full blown GT5 game.
The psychics engine has been given a overhaul which was needed after I thought I was playing GT4 in the early build version of GTHD. The frame-rate never takes a hit but like my dad was saying you still don't get that sense of speed from the game which is fair enough as that's what it is. A SIM GAME!
However one thing remains the same and its never really been changed which is a shame because it effects all racing. The Answer: AI! (surprised?) Ok there a little better than the ones seen in GT4 but in this generation of console gaming the other drivers should be at least slowing down or making a decent attempt as to not hit you. Sadly this isn't the case. They do make mistakes tho and when they do hit you it effect them as well. Come on PD/Sony sort it out!
Other than that its bound to be a system seller for all GT fans. AMAZING!

Maybe the full version will have better AI, I dunno how far along is this version you're playing?

I have no idea how far in development this build is but considering the GT5P game is meant to be out in a month or two I can't see it changing all that much. Maybe for when the full blown GT5 is out it will be improved a lot more.
As for damage... no, none at all but to be honest I'm not that bothered. Yea ok Forza 2 on the Xbox360 has damage modelling but the GT5P demo wins every time on the visuals!
